Homemade nut granola

Ah, breakfast. As much as I’d love a homemade smoothie for breakfast every morning, if I’m going to lose these kilograms, I need to start listening to the experts (ie my nutritionist). She suggested having this homemade nut granola for breakfast – with Greek yoghurt and fresh berries.

From the start – this is not muesli. This is a tasty combination of roasted nuts and seeds – and it smells like Christmas. Yes, it’s not cheap – you’re looking at R150 or so to make this batch. However, I can only handle two tablespoons for breakfast (with yoghurt) – twice a week for breakfast, it will last a week or so.

It’s crunchy and ridiculously filling – however, I admit I do need a little drizzle of honey with mine – otherwise it is quite savoury – however, the Mr is fine with it as is.Recipe adapted from here.

Ingredients:

100g walnuts (roughly chopped, unsalted and not roasted)
100g hazelnuts (roughly chopped, unsalted and not roasted)
100g nut and seed mix (I love this one)
100g Almond flakes
2 tsp Cinnamon
2 tsp Ginger
1/2 tsp Nutmeg
3 tbs Coconut Oil

Method:

Preheat the oven to 160 degrees C. In a small saucepan, melt the coconut oil with the cinnamon, ginger and nutmeg. Add the nuts and seeds and stir to coat. Place on a baking tray – in a single layer – and roast for 10 – 15 minutes, until lightly toasted. Allow to cool completely before storing in an airtight container. Sprinkle over double cream Greek yoghurt for breakfast, with a few berries.
